The story behind Mimosa Bakery
There is a deeper meaning behind the name Mimosa Bakery:
The mimosa flower might look delicate, but it's actually known for its strength and ability to thrive even in tough conditions. In Italy, it's given on International Women's Day to celebrate how strong and beautiful women are.
Mimosa Bakery is meant to remind women of that strength, to celebrate female entrepreneurship, and to share a little sweetness with the world every day.
Mimosa Bakery is owned and operated by Jennine Terra Rybicki. Jennine is a self-taught baker, who started learning about vegan baking about 10 years ago. She fell in love with it and has since transformed her all her recipes to be 100% vegan. She lived half her life in Portugal and the other in the US and moved to Florence, Italy back in January, 2023.
